ASSESSMENT OF PHYSICO-CHEMICAL PROPERTIES AND MINERAL CONSTITUENTS OF BANANA GROWN IN DINAJPUR

Abstract
Banana is one of the most popular desert fruits, which is available throught the year. In terms
of per capita consumption, its rate is higher than any other fruits in Bangladesh. The study
was conducted to determine the nutritional constituents of selected varieties of banana such
as Sabri (desi), Sabri (hybrid), Amritsagar, Chini Champa, Modhua and many local varieties
available in the Dinajpur district. Each value represents the average of five replications. The
physico-chemical properties studied included moisture, titrable acidity, total soluble solids,
fiber and ash with the value ranges of 69.78-79.65%, 0.32-0.48%, 13.36- 19.08%, 15.20
21.76 ºBrix, 0.45%-0.95%, 0.25%-0.94% respectively. The maximum moisture (79.65%) and
ash (0.94%) was found in Amritsagar. Modhua had a maximum total soluble solids (23.76
ºBrix).Chini Champa contain maximum fiber (0.95%) The bio-chemical properties of
different varieties of banana showed protein, total sugar, fat, β-carotene, vitamin A and
vitamin C with a value of 1.35-3.12%, 13.36-19.08%, 0.04-0.11%, 0.023-0.093mg/100gm,
3.29-5.55mg/100gm and 3.19-4.88mg/100g respectively. Sabri (desi) had a higher value of
the total sugar (19.08%). Sabri (hybrid) contained the highest amount of protein (3.12%)
and Chini Champa contained a higher amount of fat (0.11%). The β-carotene
(0.093mg/100gm) and vitamin A 5.55mg/100gm content were excellent in Amritsagar. The
vitamin C (4.88 mg/100g) was higher amount in Sabri (desi). The mineral nutrients were
studied included calcium, magnesium, phosphorus, and potassium with the range of 10.00
20.04mg/100g, 30.33-32.42mg/100g, 12.11-21.78mg/100g and 69.04-53.39mg/100g
respectively. The calcium (20.04 mg/100g) and phosphorus (21.78 mg/100g) were found
higher amount in Sabri (desi). The maximum potassium (69.04mg/100g) found in Amritsagar
and Modhua contained higher amount of magnesium (32.42mg/100g). The overall
assessment of the experiment, Sabri (desi) and Sabri (hybrid) contained nearly similar
amount most of the nutrients. Sabri (hybrid) contained highest amount of protein (3.12%) and
most of the important nutrients such as Vit C, Ca, Mg, fiber etc. found in good amounts
which are beneficial for healthy dietary persons and its yield was higher than other selected
variety. On the perspective of farming income and healthy dietary persons, Sabri (hybrid) can
be recommended for cultivation in farmer level.
