ISOLATION AND IDENTIFICATION OF BACTERIA FROM DIFFERENT TYPES OF TABLE EGGS AND EGG STORING TRAYS COLLECTED FROM LOCAL MARKET

Abstract
Egg and egg products are vital human dietary content due to lower cost. But improperly
handled egg could be source of public health hazard. The present study was aimed to
isolate and identify the egg-borne bacteria from egg storing trays & different parts of
table eggs such as egg shell and yolk. The anti-biogram profile of the isolated bacteria
was also assessed. A total of 90 samples comprising different types of table eggs and egg
storing trays were collected randomly from different grocery shops of Dinajpur sadar
during the period of January to June, 2018. All the microbiological study were confirmed
by cultural and biochemical test. Antibiotic sensitivity test of the bacterial isolates was
performed by disc diffusion method. Out of 90 samples, the number of bacteria isolated
were Escherichia coli 17 (18.89%), Salmonella spp. 10 (11.11%), Pseudomonas spp. 22
(24.44%), Klebsiella spp. 14 (15.55%) and Staphylococcus spp. 35 (38.89%). In the
present study, highest contamination found in egg shell and egg storing trays than yolk. It
was also observed that out of five (05) isolated pathogens Staphylococcus spp. (33.98%)
was more abundant in the table eggs in comparison with E. coli (16.50%), Pseudomonas
spp. (21.36%), Klebsiella spp. (13.59%) and Salmonella spp. (14.56%). The antibiotic
study revealed that isolated E. coli were resistant to most of the antibiotics used for the
sensitivity test .Other isolates, Staphylococcus spp. and Salmonella spp. were resistant to
Amoxicillin, Erythromycin and Cephalexin. Pseudomonas spp. and Klebsiella spp. were
resistant to Cephalexin, Tetracycline and Kanamycin. This may be due to indiscriminate
use of antibiotics in the treatment of bacterial disease in the layer house. The table eggs
harbor multi-drug resistant bacteria may impose public health hazards if these bacteria are
transferred to human through food chain. Eggs are exposed to contamination due to faulty
sanitary condition during production to storage, high temperature, dust, hand touching,
and all other surrounding pollution state.
